Classy Sunday Dinner

Mexican Lasagna – Totally Healthy

1-1/2 lb ground beef
2 slices pepperjack cheese
dried onion
6 Tbsp garlic
2 Tbsp smoked paprika
1 Tbsp cayenne pepper
4 oz. Velveeta
1 c. enchilada sauce
1 c. Pace Picante
8 regular flour tortillas

Brown ground beef, add dried onion and spices. Add 1/2 c. enchilada sauce. Stir. Spread 1/4 c enchilada sauce on bottom of 13×9 pan. Layer:
2 tortillas
pepperjack cheese
enchilada sauce
2 tortillas
ground beef mix
velveeta
2 tortillas
ground beef mix
velveeta
enchilada sauce
2 tortillas
ground beef
velveeta
enchilada sauce

cook for 30 minutes at 375°. Serve with Pace Picante.

Lazy Sopapillas

8 tortillas
2 c. sugar
6 Tbsp ground saigon cinnamon
grapeseed oil

Combine sugar and cinnamon in medium mixing bowl. Pour 1-1/2 inch grapeseed oil in small saucepan, heat until drop of water sizzles in oil. While heating oil, use pizza cutter to slice tortillas into eighths. Add pieces of tortillas to hot oil until just browned on edges, pick out of oil with slotted spoon and drop into cinnamon sugar; coat. Remove to plate, repeat with remaining tortilla pieces.
