Leftover Soup 3 cups turkey 2 cups chopped leftover vegetables (we used carrots, celery, radishes, onion) 32 oz. stock/broth 32 oz. crushed tomatoes 2 cans white hominy 1 can yellow hominy 1 bunch cilantro, chopped Garlic powder Salt Pepper Smoked Paprika Directions: 1. Saute vegetables in non-stick dutch oven with garlic, salt, and pepper to taste. 2. Add crushed tomatoes, stir. Add smoked paprika (we used 2 tbsp). 3. Add stock. 4. Add hominy (drained). 5. Bring to boil then reduce to low for one hour, stirring occasionally. 6. Add turkey, cilantro. Cook on medium 10 minutes. Serve.
